Vegan pancakes, for the win!

I’ve been spending a lot of time over at the Post Punk Kitchen lately, an online forum for vegans, and specifically an online forum for readers of Vegan with a Vengeance and Veganomicon: The Ultimate Vegan Cookbook. The author of the first book, and co-author of the second, is Isa Chandra Moskowitz, a Brooklyn girl who created her own vegan public access tv-show, and from that launched a whole vegan revolution.

I’ve had Vegan with a Vengeance on my shelf for ages (and the second book should be arriving tomorrow), but had only made the blueberry scones (actually it’s just her basic scone recipe with the fruit variation – blueberries added per her instructions), and they were delicious. DELICIOUS. I haven’t made anything else for the same reason I haven’t made most things out of most of the vegan cookbooks I own except for baked goods: the rest of the recipes have vegetables in them. And following this healthy pattern, this weekend I made Isa’s vegan pancakes.

My last vegan pancake experience wasn’t so great, so I was hesitant, I’ll admit. But the kids wanted pancakes before my Mom took them to Sunday school, and I didn’t have any mix, and I’m really trying to try vegan alternatives to everything, and the Post Punk Kitchen people have been so helpful I knew if I screwed up again I could get some advice. So I gave it a shot. And I’m so glad I did. They were great! The kids loved them, and the adults did too. Even Greg and Jason, who still think bacon is god’s gift to mankind.

I knew something was different than before when the batter smelled good, and they looked normal in the pan:

So now I have two delicious vegan pancake recipes; this one in Isa’s book, and the Easy Weekend Pancakes. I’m thrilled! No more wondering what to do on the weekends when the kids call for pancakes.

Maybe one of these days I’ll even make a vegan recipe with vegetables in them! Hey, it could happen.
