Ivana asks what veggies I like

Hollie, I have a question for you: What vegetables do you like? If this list doesn’t seem long enough, another question: What vegetables will you eat?

I’ve been putting this off, because it’s so embarrassing to answer! Here’s my very short list:

  1. Green beans
  2. Sweet potatoes
  3. Peas
  4. Romaine lettuce
  5. Kale (only in smoothies or as chips – too bitter any other way)
  6. Celery (in soups, can’t handle it raw yet)
  7. Carrots (see #6)
  8. Pea pods (Greg makes these in stir-fry)

There it is. There you go. Where did that rock go again? I need to go hide under it.

Get out of town, anybody who actually LIKES kale is a veggie loving rockstar in my opinion.

Peas are awesome.

Does it count when you only like something blended so fully and mixed with other things that you can’t recognize it anymore?

It totally counts. That’s my favorite way to eat a banana, actually.

That’s a decent list in terms of variety! I think you just need some good recipes. I would like to make some orange-honey carrots for you. :) Many people don’t eat ANY veggies raw, so don’t knock yourself. Sounds like lots of soups are in the offing this fall/winter.

Oh, come on, guys. Hollie is a rockstar in a lot of ways, but not in the veggie-loving sense. If this is what passes for veggie-loving in our society, no wonder we’re all so challenged in the servings-of-produce-per-day department, amirite?

It is a short list (especially because sweet potatoes and cooked carrots don’t count IMO – though healthy, they are in the starch category, not the veggie category), but hey, you’re working on it. You might try collard greens instead of kale in some recipes – they tend to be a little bit sweeter. Also, since you seem pro-soup, bitter greens go well in soup. The other ingredients and long cooking time go a long way to mellow the bitterness.

Yeah, I figured the starches wouldn’t count. It’s why I didn’t add “corn”, although I can’t eat corn anyway anymore. I learned that when I did the elimination diet.

It’s a short list, but that’s not bad if you have some favorites that you don’t mind eating a lot of. And there’s a few different kinds of veggies, so you can try expanding from Romaine to other kinds of lettuce, and maybe from carrots to parsnips. And if you don’t totally hate cauliflower on sight, this is one of my favoritest veggie recipes:

I do like other kinds of lettuce, just not the bitter ones. And I don’t like cauliflower at all! I might still try it though, just to see. I bet the guys would like it (nothing really goes to waste around here).

If you like celery, you may like celeriac. it goes well in soups.

I made this most amazing celeriac bisque soup last week, which has been most satisfying with this stormy weather.

How about this for this recipe for you:
-a couple celeriac, peeled and cubed in 1/2″ cubes
-a bunch of carrots, in 1/2″ pieces
-one sweet potato, peeled and cubed
-shallots, onion (quartered), and/or garlic cloves
-and one more winter vegetable, in small quantity, that you might want to give a try (parsnip?), or not.

toss with your favorite oil (olive is my old standby), favorite herbs (mine are usually thyme and rosemary, but sage is nice with sweet potato), some pepper, and salt (I use plenty).

Roast in a big open pan at 375, occasionally stir around, until all nicely caramelized and soft.

Sure, it’s mostly starches, but in the winter it really satisfies. Good as a main dish with salad, or alongside your favorite protein.

I find that roasting many vegetables really draws out the sweetness. I make roasted cauliflower all the time…it’s amazing roasted.

fortunately for those with Celiac disease, celeriac is 100% gluten free!
