Beautiful rainbow vegetable bread

This bread was a grand prize winner at the Kittitas County Fair this past weekend. I took the photo with my iPhone, and it doesn’t do it justice. The colors were bright and beautiful, and the loaf looked airy and delicious. The information tag attached said it was made with different types of vegetables. I’d love to find a recipe for this!

I would guess that the liquids are the juices of spinach, beet, and 2 kinds of squash, or maybe carrot and squash (helped along by turmeric?). They would all have to be kneaded separately.

I am guessing that the dough is something like pizza crust, and you would roll out different sizes of circles. The middle could be a small ball, then put the next smallest pizza circle on top and pat/press it down all around like tarp over an igloo, repeat until you get to the outside green one — this would mean we are looking at it upside down in the photo above.

Interesting! I’d wondered how that could go together. The lines are so clean.
